Creamy Dill Seafood Penne Six individual servings
1. Boil approx. 6 cups of penne pasta until tender. Drain and set aside. 2. Melt 1 tablespoon butter in saucepan. Add 1 chopped onion and 3 cloves chopped garlic. Sautee until tender. 3. Add to onion mixture: 4 oz. cream cheese, 1 cup cottage cheese. Heat on low until melted, stirring occasionally. 4. Add the following: 1/4 cup parmesan cheese, 1-10 oz. can mushroom soup, 1/2 cup milk, 2 teaspoons dill weed, 1/4 teaspoon pepper, salt to taste. Heat through until creamy and blended. Do not boil. 5. Remove from heat and add the following: 8-10 oz. fresh scallops, 4 oz. fresh shrimp, 4 oz. imitation or fresh crab. 6. Stir together pasta and creamy seafood mixture. Spoon into Large Bear Claw. Sprinkle with grated mozzarella cheese. Bake 25-30 minutes at 350 degrees.
